Couscous Spaghetti

24oz Jar Spaghetti Sauce  1lb Ground Beef  1 Sweet Pepper (diced)  2 Cups Uncooked Couscous In a small pot bring 3 cups of salted water to a boil. Add couscous, cover, and turn to low. Cook until all liquid is absorbed, about 10 minutes. In a large skillet heat a drizzle of olive oil over medium high heat. Cook sweet pepper stirring constantly for 2 minutes. Add beef. Cook, breaking apart until cooked through. Mix in cooked couscous, sauce, and salt and pepper to taste.

Deconstructed Ratatouille

A first and favorite of ours from Hello Fresh . This is a meal that feels fancy, but is fairly easy to make. It is very filling on it’s own, but we like to have it with a protien. Ingredients: 1 Red Onion 1 Yellow Bell Pepper 8 Grape Tomatoes 1 Tbsp Italian Seasoning 1 Small Eggplant 1 Zucchini 1/4 tsp Basil 2 Ciabatta Rolls ¼ Cup Feta Cheese 2 Garlic Cloves 2 Tbsp Balsamic Vinegar 3 Tbsp Olive Oil Salt and Pepper Directions: Preheat the oven to 425 degrees. Halve, peel, and cut the onion into ½-inch wedges. Core, seed, and thinly slice the bell pepper. Trim the eggplant, then slice into ½-inch strips lengthwise. Cut each strip in half widthwise. Cut the zucchini into 3-inch sticks. Toss the onion, pepper, and half the grape tomatoes on a baking sheet with a drizzle of olive oil, Italian seasoning, and a pinch of salt and pepper. Strawberry Banana Cake

  Cake: 1 box yellow cake mix (unprepared) 3.4oz package instant vanilla pudding (unprepared) 8oz container of sour cream 4 eggs 1/2 cup vegetable oil 1/2 cup milk Filling: 3oz package of banana pudding (prepared) 8oz container of Cool Whip 2 cup sliced strawberries 1 banana Preheat oven to 350°F. Grease two 9 inch round cake pans. Add first 6 ingredients in a large bowl. Mixuntil all dry ingredients are wet, do not over mix. Transfer to prepared pans. Bake for 40 minutes or until a toothpick inserted comes out clean. While cakes Cool prepare banana pudding according to package if you have not done so already. Thinly slice banana. In a small bowl mash ½ cup of the sliced strawberries with the back of a fork. In a large bowl mashed strawberries and Cool Whip. Once cakes are completely cool, remove from pans. 2nd Thanksgiving

The year our youngest daughter went to visit her Dad for Thanksgiving was the first big holiday our family wasn't all together. Not having a close family growing up, I always try and make the holiday season special for my children.  When she returned after the break, we made sure to hold 2nd Thanksgiving, complete with Banquet Homestyle Gravy & Sliced White Meat Turkey. (Something that is a fond memory from my childhood.) California Roll Bowl

This is my take on Good Housekeeping's California Roll Salad. 2 Tbsp Mayo 1 Tbsp Sriracha 1 Tbsp Lemon Juice Salt 2-3 Cups Butter Lettuce 1 Cup Rice 2 Mini Cucumbers, Diced 1 Avocado, Diced 8oz Imitation Crab Meat 1 Scallion, Thinly Sliced Cook rice according to packaging instructions. Meanwhile, in small bowl combine mayo, sriracha, lemon juice and a pinch of salt. Divide rice, lettuce, cucumber, avocado between two bowls. Top with crabmeat, sriracha mayo, and scallions. 

Tomato Sausage Pasta

Based on a recipe by  budgetbytes.com Ingredients: 1lb Italian Sausage 2 Garlic Cloves 6oz Can Tomato Paste 28oz Can Crushed Tomatoes  2tsp Italian Seasoning ½ Cup Water 16oz Cavatappi Pasta 1/3 Cup Sour Cream 1 Cup Fresh Spinach Directions: Bring a large pot of water to a boil for the pasta. Brown Italian sausage in a deep skillet over medium heat. Add minced garlic. Sauté one minute more. Add the tomato paste, crushed tomatoes, Italian seasoning, and water. Stir to combine. Let the sauce simmer, stirring occasionally, while pasta cooks. Cook noodles according to package and drain. After the pasta has cooked, add fresh spinach to sauce until just wilted. Turn off heat. Stir in sour cream, then noodles until combine. (Note: we don’t add all the noodles at once. Once I am happy with the noodles to sauce ratio we save the extra for buttered noodles later, or for our little ones that don’t like as much sauce.)

Ham Salad

This original recipe is from a tasting event we went to at Blue Heron Events here in PA. We made adjustments to accommodate our family's preference, and you can do the same. Or if you have more ham you want to use, add more of the other ingredients too. 6 cups cooked ham, diced 6 hard boiled eggs, chopped 4 stalks celery, diced ½ yellow onion, diced 4  Tbsp sweet relish  1 ½ cup mayo (add more for desired texture) Add all ingredients to a large bowl. Mix together until just combined with spatula. We serve on bread or small rolls for sandwiches. Can also be eaten as is.
